The menu? A tantalizing journey through gourmet delights. Start with an Amuse-bouche of crab and smoked Gaspesian salmon tartlet, drizzled with black garlic aioli, and zingy lemon pearls with pepper. The appetizer features a duck confit salad, adorned with Cantons de l'Est goat cheese and a tangy apple and sea buckthorn vinaigrette.
For the prelude, they serve a rich chicken liver mousse, paired with Sainte-Catherine-de-Hatley onion confit and a crispy crostini.
